Solved, mob_environments is part of animalmaterials, but needs to be explicitly enabled. Somehow the modpack was enabled after installing, but this part of the mod-pack was not.

I can't find mob_environments anywhere, also I think it would make sense to mention the dependencies in the README, since this is a breaking change when you upgrade this from a previous modpack version.
