I've found a way to fix it- well, sort of. Editing minetest.conf to say: "video_driver = software" will allow it to launch. Granted, the graphics are quite buggy, but at least it launches. Oh, and make sure you don't turn fancy trees on (I tried), because that will cause a segfault, apparently. Edit...
