- yes you can use it on a server. Two of my servers use it without significant issues.
- It includes a small minetest.conf to contain its default settings, and will also use settings from your global minetest.conf as well for overrides, as with any other game.
- You can just delete the game and download/extract updated versions as you see fit. This won't affect your world's files. Personally I'd suggest using git to track it, but whatever works for you.
- you can add whatever mods you want, so long as they otherwise work with the rest of the content in the game; my two servers have a few out-of-game mods installed as well, for their specific needs.

On the contrary :-) You don't loose anything when dying. All that happens is that you're teleported back to spawn. Builders generally don't like bones lying around or having to pick up inventory again after falling down from a scaffolding structure next to their project.
