The new minetest dev versions have a flat mapgen included. You can download a dev build in the forum if you don't have the time to wait for the next stable release or build it by yourself.
There are also some mods which allow flat mapgens like this one.

if you want, download a "flat" map.

Or instead search about a flat mapgen mod.

Install it in a new world, and ....

Now you have a flat map!

just add "mg_name = flat" to minetest.conf (or the config file of a world)

In development version of Minetest 0.4.13, there is already flat mapgen in create world dialog on main menu.

You're right, so l didn't remember correctly, flat is not hidden, it's available.

You want one like mine garywhite? Start a new singleplayer world. DO NOT enter it yet or this will not work, but go to the worlds folder then to map_meta.txt (or something like that) then scroll down until you see mg_flags = and the defaults are already in there. One should say noflat or may not say it at all. So make noflat, flat, or if there is no noflat just type flat. Then save it. By the way you should use a text editor if using Windows. Then start the world and it should be flat.
