If you're looking to play solo, you might want to spiff up the default experience. If you're playing online, I recommend menche's server for a more "full-fledged" experience, or 0gb.us for the "de facto" experience. Both are great servers with a lovely community!
If I may say so myself, I have great taste in choosing mods for a singleplayer mode. I've been around since 0.4 began, so, yeah. the list of mods I use, with links to each download page. I haven't updated it recently, but other than Using the food mod, I haven't changed.
Also, if you're playing singleplayer, you'll want to have a build with LuaJIT- land generates faster, mods run quicker. PilzAdam has a nice set here. Of course, that's for Windows, but 96% of the desktop market runs it, so I'm guessing you do too.

Yes, that is a good server. It's the one I play on most of the time.
