Generate a more gentle, realistic map.

Hi,

I notice that sometimes in my world I get huge cliffs or massive chunks of stone jutting out at right angles. This doesn't seem very realistic and I'm sure it hasn't been like this in previous versions.

e.g.

So, my question is, how can I generate a map that is nice and gentle, with hills and flatlands, small beaches and rarer deserts?
