So I am new to minetest and I have a question regarding Leaves and Apples:
I was wondering if you find a tree and strip it of some/all of it's Apples or leaves will they grow more leaves or apples?

No. You can grow whole trees by planting saplings, but then they stay the same.

Once a tree grew, it doesn't re-generate apples or leaves.

A way to manipulate those defaults, is using the nature-mod which adds leaves and tree trunks to trees and they become bigger and bigger.

A better soulation is a mod "growing trees" - google it, it's very nice.
