I have been messing around with my own server lately was wondering How often does this game update about?

Well, if you keep up with the development builds, multiple times a week. But if you're using only stable releases... once every few months.

Projects which run over SVN/Git can update very fast, depends on the programming speed of the devs.
As HeroOfTheWinds said, this can be multiple times a week
