I'm afraid that I can't help you with Windows support, I only know Linux (in which case, it is usually sufficient to simply install your distribution's package of LuaJIT and build against it).

No problem. I just wanted to try to implement it due to seeing in the forums that it could significantly increase the speed.

FYI, do they plan on distributing LuaJIT with Minetest in the future, instead of just providing support for it?

No, I believe the plan is to leave it as it is now, as a compile-time shared library option, with interpreted Lua bundled in as usual. This is primarily because the LuaJIT team doesn't consider bundling to be an appropriate use of the library (probably beacuase doing so adds extra headches to updating LuaJIT).
