Maybe I missed it, but I can't find a way to adjust mouse sensitivity. Running Mint 17.3 on a Win10 VM host.. not sure if that's the issue, but moving the mouse slightly will spin the view around to the point where it's unplayable.

mouse_sensitivity defaults to 0.2 in minetest.conf. Try mouse_sensitivity = 0.1, or even 0.05. Also try xset m 1 0.1 to remove acceleration of the mouse.
