Seeing as the nether is a mod, it is up to the developer of the mod to stabilize it, and it has nothing to do with the actual development of Minetest itself. Also, Minetest is not meant to be a Minecraft clone, and thus, the nether is not an important part of Minetest. How about trying one of the awesome mapgens for Minetest such as
Watershed or this
awesome underground caves mod? Or, you could try this
sub game.There are plenty of modders who have made very good playable, stable games/mods, and the engine itself is pretty stable and backwards compatible. Almost all mods will work from one update to the next. Minetest itself is pretty stable. Is it finished though? No. But, for the large part it is stable.
