how do you delete water sources

Do you mean above or where is is? and if I do delete it does the water go away?

Where it is is it. And yes, the water goes away, if all water sources are deleted per building other blocks on there place.

If there are one or two water sources, you can remove them by "punching" with an empty bucket.
