I'm running on Windows 8 and I just uninstalled the Japanese language pack (In control panel) and reinstalled Minetest. The problem with it is.. is that there is barely no text in the menu. My Drivers are up to date.. My Graphics card is decent and I have no idea why its still just barely any text. Any ideas?

No idea. Could it be GetText causing the issue? I'd remove locale, and it should run in English just fine.

Just remove the Japanese language pack of Minetest
-> Delete minetest/locale/ja
