There is a dragon created in the "Not so simple mobs" mod. Do you think anyone could make a Dragons Mount mod based on that or the Minecraft Dragon Mounts mod?

I very much doubt that there is an automatism for that. Modders do sometimes re-implement ideas they might have seen elsewhere for Minetest. Apart from that, textures, models and sounds could most likely be re-used.
