I just loved the way minecraft infdev-alpha used to have water flow, so i recreated it in minetest.
This replaces normal water by default, but you can stop that by changing replace_normal to false!

so from your video i looks like if you find the highest point in your map and place a water nod ..bam water world, nice

You should add default to depends.txt otherwise WATER_VISC and WATER_ALPHA may not be defined wich causes a server crash.

this fixes a problem i had with nukes when i would blast a continent and the water wouldn't fill the crater. +1 :-)
