Agreed, adding desert_cobble is a simple and logical step and adds a new block to the game itself which is already in use on Xanadu server and the users find interesting... I already use a fork of the stairs mod and add stairs, slabs and corner stairs for all blocks that need them...

This is very interesting. I tried entering the server but not grant me the priv interact

Soft, sedimentary rocks like sandstone generally don't need to be broken into "cobble" to be used. The huge sandstone blocks that make up the pyramids at Giza (as well as the limestone that originally covered them) were simply cut and faced, with little waste.
With harder rocks, like granite, you'd often have to break them up (mostly because they're also brittle) and you'd end up with irregularly-shaped "cobbles".
It makes quite a bit of sense sense that you could get solid default:desert_stone blocks with just a pick, but not solid default:stone.
