Let's start by the basics:
Bedroll and futon
Bedroll should be easy and simple to craft and, most important, portable, only allowing the player to spend the night but bot reset spawn point.
Futon should be harder to craft. Not portable, would allow night spending and spawn point relocation.
Door, window and gate
All of these items should be stackable in order to create larger items.
As an example:
Door: 6 planks (2x1 blocks)
Wide door: 1 door + 1 door (side by side)
Tall door: 1 door + 1 door (one atop the other)
Wide and tall: wide door + tall door (total of 8 blocks)
Castle gate/drawbridge: wide and tallx2
With windows it should work the same but with window space=1 block space.
Gates, here, are to be understood as gates to attach to fences, to enclose animals and/or crops. Perhaps the ultimate structure made with gates could be the barn door...
Craftsman's table, kiln, furnace and anvil
Craftman's table for leather and wood working
Kiln for cooking and pottery/clay work
Furnace for refining ore into ingots and other materials smelting.
Anvil for metal work: metal tools and weapons
Scrolls, ink-brush, ink-stone, ink-stick, pigments
Scrolls to replace books. Craftable from paper/papyrus/leather/fabric.
Ink-brush and ink-stone for writing and painting.
Ink-stick. Condensed form of ink, dispenses the usage of bottles/flasks to carry ink.
Pigments. Distilled from flowers/animal parts/minerals.
This is only a part of a table I've been working on to propose here at the forum.

Minetest is not Minecraft. Stop trying to make them look alike.
