Easy single man’s cooking.

Cheat’s Chicken Cacciatore

3 chicken legs (drumsticks)
1 tin of tomatoes
1 large onion
1 tin of mixed vegetables
1 chicken stock cube
Mixed herbs and black pepper

*optional – handful of noodles

This is so easy it’s not funny. Chuck the chicken legs in a saucepan with the tinned tomatoes and a tin full of water. Put it on a low heat. Now dice up your onion and put it in there too, along with the stock cube and however much herbs and pepper you like.

Put the lid on the pot, leave the heat turned down very low, leave it for an hour.

After 1 hour the meat will come away from the bones very easily but it’s not yet falling apart. I don’t like bits of gristle and knuckles in my meal so I pull all of them out now. Now is also the time to add noodles (macaroni) if you want them. Once you’ve got the bones out let it cook for another 30 minutes.

Drain your tin of vegetables, they’re already cooked, that’s why we didn’t put them in earlier. Take your saucepan off of the heat, tip the mixed vegetables in and stir them through. That cools it down enough for you to eat.

Eat straight from the pan, use bread and butter to clean up the last of the sauce, Doing the dishes is easy tonight too!
