How do I change the Version name and, how I change the App Name when it runs?
Well you see I here Making a Game Called MetroidTest and I made the Background and, Logo so I need the version say MetroidTest Version 0.0.1

You are free to make your fork of Minetest.
But it seems like you dont change anything in the code. Otherwise you would know how to change the version number.
So I dont tell you how to do it and also recommend that others do it neither. Forking Minetest and just changing the name is immorally IMO.
